Process

In Montesacro we maintain the same steps as a craft process improved technologically. Previous months of the harvest we carry out an individual monitoring of the land and we wait for grapes to reach optimum maturity point; giving us high sugar levels and low acidity.  In vintages we clarify and filter the juice to get a nectar without impurities for fermentation being here where borns the personality of our wines, characterized by carefully fermentation controlled with cold and resulting in a robust broth, with high alcohol level and an acidity assembled perfectly.
